Freezer burn is not burning and it is not contamination. It is moisture leaving the surface of the food, travelling through the air in the cabinet, and refreezing somewhere colder — usually as frost on the packaging or on the walls. Every freezer does it slowly. What is worth investigating is food burning within weeks rather than many months, because that means the cabinet is either not cold enough, not stable, or letting humid room air in, and all three are diagnosable.
Read this first
- Unplug the freezer before removing the rear evaporator panel or cleaning the condenser coils.
- Never chip frost off an evaporator with a screwdriver or an ice pick. Puncturing an evaporator tube destroys the sealed system and it is not repairable at home.
- Food that has partially thawed and refrozen is a food safety question, not just a quality one. Anything that has been above 40°F for more than two hours should go.
- Do not judge a temperature change for at least 24 hours. A freezer full of food moves slowly and you will chase your tail otherwise.
Step by step
Measure the temperature properly
Put an appliance thermometer between two packages in the middle of the load, not in the door, and read it after eight hours. You want 0°F. A freezer sitting at 10 to 15°F preserves food far less well and drives moisture out of it noticeably faster, while the display on the front may still read exactly what you set. Take a second reading in a different part of the cabinet — a wide gap between two points is itself a finding and points at airflow rather than at the setting.
Log it for 48 hours rather than reading it once
Stability matters as much as the number. Read the thermometer several times a day for two days and write down the values with the times. A cabinet that sits at 0°F and briefly rises during a defrost cycle is normal, and every frost-free freezer does this several times a day by design. A cabinet swinging widely, or one that climbs every afternoon, is telling you something — usually a door being opened, a room getting hot, or a defrost cycle that is running too long or too often.
Test the door seal all the way round
Close the door on a dollar bill at six points around the perimeter and pull. Anywhere it slides out with no drag is leaking, and warm humid room air arriving continuously is the single most direct way to freezer-burn a whole cabinet. Clean the gasket with warm soapy water first, since sticky residue stops a perfectly good seal closing. Check the hinges and the level of the cabinet too — a freezer that does not sit level will not self-close, and a door left ajar overnight does a lot of damage.
Read the frost pattern in the cabinet
Where the frost forms tells you where the moisture is coming from. Heavy frost concentrated around the door opening or on the inside of the door means air is leaking in at the seal. Even, fine frost throughout means moisture is coming off the food itself, which is a packaging problem. A solid slab of ice packed into the evaporator fins behind the rear panel means the defrost system has quit, and that is a repair rather than a habit change.
Fix the packaging, which is most of the battle
Air touching food is what causes freezer burn, so the answer is to remove the air. Wrap tightly in freezer-grade material rather than thin cling film or a supermarket tray, press the air out of bags before sealing them, and use containers sized to their contents rather than half-empty ones. Date everything, because a bag that has been in there two years will look burned no matter how good the freezer is. Vacuum sealing genuinely works and it is the biggest single improvement available.
Check airflow and how the cabinet is loaded
Frost-free freezers circulate air continuously and rely on that circulation to hold an even temperature. Packing food tight against the rear vents blocks the airflow, which leaves warm pockets and cold spots in the same cabinet. Leave clearance around every vent. At the other extreme, a nearly empty freezer has almost no thermal mass and swings with every door opening — filling the space with water bottles costs nothing and stabilises the cabinet noticeably.
Clean the condenser and confirm the fans run
If the cabinet cannot hold 0°F, start with the mechanical basics. Unplug the unit and vacuum the condenser coils at the rear or behind the lower grille, then confirm the condenser fan spins when the compressor runs and that the evaporator fan behind the rear panel runs when the door switch is held closed. Dust on the coils and a stopped fan both leave a freezer running constantly and still failing to reach temperature, which produces exactly this complaint.
Check the defrost circuit if you found an ice slab
If the rear panel came off to reveal a block of ice rather than a light even frost, the defrost system has failed and the cabinet is cycling badly as a result. With the unit unplugged, test the defrost heater for continuity and test the defrost thermostat, the small bimetal disc clipped to the coil, which should show continuity while frozen and open as it warms. Both are inexpensive parts, and either failing produces a freezer that swings in temperature and burns food quickly.

When to call a pro
Call a technician if the seal is good, the coils are clean, the fans run and the packaging is right but the cabinet still cannot hold 0°F, since that points at the defrost circuit, the control, or a sealed-system fault — and sealed-system work legally requires EPA Section 608 certification. Call one too if the evaporator ices back up within a few weeks of a manual thaw, which means the defrost circuit rather than the door. Weigh the repair against the appliance: a chest or upright freezer past ten years old with a sealed-system fault is usually a replacement, and a technician should give you a figure before any work starts.
